Saturday Snapshot - August 24

So, you get a bonus today...pictures and recipes!  Well, links to recipes.  I've been a busy bee in the kitchen lately--mostly because I'm rather bored with the dishes I have in our current rotation, but also because I'm working on a bit of a project for someone (more about that later).  Because of the second part of that reason, I've been taking pictures of some of my dishes....enjoy!

First off, Enchiladas Colorado:

I'll admit I cheated on this and used pre-made tortillas.....
We have Tacos every single Tuesday.  The kids would mount a mutiny if we didn't.  My go-to recipe is Chicken Ranch Tacos:


Finally, it was this recipe for Roasted Brussels Sprouts that convinced me that those little buggers were actually edible...and even yummy!


Oh great...now I'm hungry....

  2. Your enchiladas look great. I've recently taken to eating brussell sprouts too- I've been steaming them to partook them, then pan frying with a bit little bit of bacon, and some almonds- it's fabulous and actually quite delicious.

  3. Our boys love taco's too, but I can't convince them to try other types! The roasted brussels sprouts look delicious too - perfect on a winter's night in Sydney :-)

  6. Yum! Great food, all! Being a food photographer, I can appreciate all that delicious cooking that you've been doing! Getting it right on camera is always a challenge, as you are wanting to sit down and knosh it!

  9. I'm bored with our regular meals too, but every time I try something new I have multiple people complaining. Sometimes it would just be easier to cook for yourself and not worry about anyone else!
